Red Fife is one of our favorite heirloom hard red wheat varieties. Introduced to Canada by Scottish immigrant David Fife in the late 1800s this wheat is prized for its sweet, farmy, and subtly spicy/herbal qualities. Notably it bakes extremely well for an heirloom. It was so renowned that many of the modern wheat varieties in the United States were bred from it. Try it in well-risen rustic sourdough loaves as well as sandwich loaves. We also love this at a coarser grind for Irish soda bread.
