Frederick is a delicious soft white pastry wheat with a mild flavor. We love it in pancakes, muffins, and scones! For long-term storage keep in freezer. At the shop we also use Frederick a variety of cakes with great success. We lightly sift this flour to remove the largest pieces of bran to improve it's performance in pastry applications.
