For years we've searched for the perfect pistachio paste without success. Either the pastes were prohibitively expensive, or diluted with unnecessary oils and other ingredients .
Then we tried a paste from Boston-based Koy Pantry and instantly fell in love. Koy's paste is imported from Turkey and made with the inimitable Antep Pistachio.
Turkish Antep pistachios are prized for their especially buttery flavor and almost neon green color. This paste is bursting with pistachio flavor. The pistachios are masterfully balanced with just the right amount of sugar and blended to leave just a tad bit of crunch for the perfect texture.
We want to bake with this but honestly we have trouble stopping ourselves from eating it with a spoon. It's that good! That said, this paste is crying out to be part of your next shortbread, dolloped into a thumbprint, or spread on a slice of brioche.
