We're totally enamored with Nature's Candy, a new book by Camilla Wynne (who also wrote Jam Bake). Wynne's new book is a comprehensive take on candying fruit, covering a whole swatch of techniques and offering recipes for bakes featuring candied fruit.
Candying your own fruits is one of those things that can seem daunting. We used to feel this way too, but Wynne make the process seem approachable and sometimes downright easy!
Chances are the fruit you make at home will be so much tastier than most of the stuff at your average store. That's because most of the stuff on the market is too sweet, and often filled with additives and artificial colors (not to toot our own horn but the imported fruit we carry at the shop is really good).
And candying your own fruit turns every produce aisle into a world of possibilities. A personalized mix of citrus perhaps, or a your own sugared ginger. Candied fruits shimmer and sparkle like jewels and are great for snacking or baking with!
Wynne's got a method for candying just about every type of fruit (and nuts!)! She even talks about unusual methods like using pickling lime to firm up softer fruits and ways to candy everything from cranberries to chestnuts. Very inspiring, and a pleasure to flip through.
