This “modern landrace” wheat was bred by the Bread Lab’s Steve Jones to adapt to whatever climate it’s planted in. Over several plantings it self-selects and becomes unique to each farm. Nitty Gritty was the first farm to grow it in New England. We like this wheat in softer sandwich loaves and flatbreads.
